If you’ve never had a delicious meal from a crock pot in your home, you are missing one of the great joys in life. Especially if you are extremely busy all day and you just want to come home to a hot, home-cooked meal.
All it takes is prep and that’s why this is best to do on the weekend when you have more time.
Hearty Lasagna with Spinach and Mushrooms
1.5 lbs. hamburger
1/4 onion, chopped
2 15-oz. containers of ricotta cheese
10-oz. package of frozen chopped spinach, thawed
2 8-oz. trays of mushrooms
2 T. parsley
6 cups mozzarella cheese, shredded
32-oz. marinara sauce
lasagna noodles, uncooked
tomato sauce or paste (this was not in my recipe, but I would definitely add a can the next time I make this)

Brown the hamburger in a sauce pan with chopped onions.
Mix ricotta, spinach, and parsley in a large bowl. Set aside.
Add just enough marinara sauce to cover bottom of crock pot. This will keep the noodles from sticking to the pot.
Layer uncooked lasagna noodles over the sauce. Break the noodles to fit.
Spread ricotta mixture evenly over the noodles.
Layer sliced mushrooms.
Add a generous portion of mozzarella cheese.
Oops. Almost forgot to add the hamburger. My hamburger was dry since I rendered the fat. Next time, I would add a can of tomato paste to the beef.
Now repeat all the layers again. For the second layer I did it a little differently: sauce, noodles, ricotta, mushrooms, beef, mozzarella, and mushrooms (again).
I let it cook for 6 hours, but you can use whatever settings you have on your crock pot.
Leave it alone and let it do it’s magic.
I couldn’t wait to come home to this cheesy goodness.
I packed it up and took it to work the next day to share with my co-workers.
I think he liked it.
Like I mentioned earlier, this lasagna recipe could have used more sauce. So go ahead and add tomato sauce, paste, or marinara sauce if you have it. Enjoy!

What is it about slow cooker lasagna!?! It’s just so dang good!!!
You really can’t miss with a slow cooker. I love pot roast and stews in the slow cooker. It smells wonderful. I’ve also done french dip sandwiches. Yum.
